Vegan Ricotta

  • 1 cup raw cashews or slivered almonds
  • 14.5 ounce firm tofu drained
  • 1/4 cup nutritional yeast
  • 1/4 cup fresh lemon juice
  • 1 1/2 teaspoons salt
  • 3 tablespoons chopped fresh basil
  • 1 teaspoon dried oregano
  • water as needed

  • 8 ounce box manicotti shells
  • 3 cups marinara sauce
  • 2 cups vegan mozzarella homemade or store bought

Instructions 

  • Prepare – Preheat your oven to 350 degrees F (175°C). Have a 9×13 inch casserole dish ready for assembly.
  • Make the ricotta – In a food processor, pulse the raw cashews until they form a fine, crumbly texture. Next, add the firm tofu (no pressing required), nutritional yeast, fresh lemon juice, salt, fresh basil, and dried oregano. Process until the mixture is well combined and creamy. If the ricotta appears too thick or dry, gradually add water, 1-2 tablespoons at a time, until it reaches a smooth and spreadable consistency. Set aside.
  • Boil the manicotti – Bring a large pot of salted water to a rolling boil. Carefully add the manicotti shells and cook them for exactly 6 minutes. The shells will be partially cooked, as they will finish cooking in the oven. Drain the pasta thoroughly and rinse immediately with cold water to prevent sticking and stop further cooking.
  • Pipe the filling – Transfer the vegan ricotta into a large pastry bag. Alternatively, use a large ziplock bag and snip off one corner (about a 3/4-inch opening). Pipe the ricotta mixture into both ends of each manicotti shell until it is completely and evenly filled.
  • Assemble and bake – Spread 3/4 cup of the marinara sauce evenly over the bottom of your prepared baking dish. Arrange the stuffed manicotti shells in a single layer over the sauce.
