The addition of whipped ricotta creates an incredibly light and airy filling, offering a delightful contrast to the chewy pasta shells and rich, creamy sauce. It’s a culinary upgrade that will impress without being overly complicated.
  • Effortless Way to Boost Veggie Intake: Spinach is seamlessly blended into the ricotta filling, adding vital nutrients and a lovely green color without an overpowering taste. This makes it an ingenious method for “sneaking” extra vegetables into the diet of even the most discerning eaters, particularly children, who often enjoy the fun green hue.

Kids are often more willing to try foods that look interesting, and the bright color of these shells is sure to spark their curiosity, making this a healthy dish they’ll genuinely enjoy.
  • Simple & Convenient with Quality Ingredients: To ensure ease and incredible flavor, I highly recommend using a high-quality jarred pesto like Delallo Food’s Simply Pesto traditional basil sauce. Recipe Ingredients

Crafting these delectable Pesto Whipped Ricotta Stuffed Shells requires a selection of fresh, high-quality ingredients that harmonize to create an unforgettable flavor profile. Each component plays a vital role in achieving the dish’s signature creaminess, herbaceous zest, and comforting warmth.

For the Creamy Pesto Sauce:

  • Avocado Oil: This neutral-flavored oil is perfect for sautéing the aromatic vegetables, allowing their natural flavors to shine. Olive oil is a suitable alternative if avocado oil is not available.
  • Onion: Finely diced yellow or sweet onions provide a foundational sweetness and aromatic depth to the sauce. Ensure they are diced small enough to melt into the sauce seamlessly.
  • Garlic: Freshly minced garlic is absolutely essential for a robust, aromatic base. Aim for 2-3 cloves, but feel free to adjust to your personal taste for a more pronounced garlic flavor.
  • Seasoning: A simple touch of cracked black pepper enhances the sautéed aromatics and adds a subtle warmth to the sauce. Be mindful of additional salt, as pesto and cheese already contribute significant salinity.
  • Broth: Low sodium chicken broth is used to deglaze the pan, picking up all the delicious browned bits, and adding a savory liquid base. Low sodium vegetable broth works equally well for a vegetarian option.
  • Heavy Cream: The secret to an irresistibly rich and velvety sauce. Heavy cream provides a luxurious mouthfeel and balances the bright flavors of the pesto. While half-and-half can be used for a lighter sauce, heavy cream is highly recommended for optimal creaminess.
  • Pesto: The star of the sauce! Delallo’s Simply Pesto traditional basil jarred pesto sauce is chosen for its exceptional quality and balanced flavor profile. Remember that pesto is already well-seasoned, so taste the sauce before adding extra salt.
  • Parmesan Cheese: Grated Parmesan cheese is whisked into the sauce, adding a layer of savory umami and contributing to its creamy texture. Its sharp, salty notes beautifully complement the pesto.

For the Stuffed Shells and Whipped Ricotta Filling:

  • Pasta: Jumbo pasta shells are specifically chosen for their large, scoop-like shape, perfect for holding the generous ricotta filling. Cooking them al dente is crucial as they will continue to cook in the oven. A light drizzle of olive oil after draining prevents them from sticking together.
  • Spinach: Fresh baby spinach provides a mild earthy flavor, vibrant green color, and a significant nutritional boost to the filling. If using frozen spinach, ensure it is thoroughly thawed and all excess moisture is squeezed out to prevent a watery filling.
  • Ricotta Cheese: Whole milk ricotta cheese is preferred for its creamy texture and rich flavor. Removing as much moisture as possible, either by draining it in a mesh strainer or pressing it with cheesecloth, is vital for a firm, flavorful filling that won’t become runny during baking.
  • Mozzarella Cheese: Shredded mozzarella cheese contributes classic Italian cheesiness to the filling, offering a delightful stretch and mild flavor. An extra sprinkle over the assembled shells before baking creates a beautifully golden, bubbly topping.
  • Grated Parmesan Cheese: Adding grated Parmesan cheese to the filling enhances its savory notes and complements the other cheeses. Its distinct flavor is integral to a truly authentic Italian-American taste.
  • Egg: One large egg acts as a crucial binding agent for the ricotta filling, helping all the ingredients hold together during baking and preventing the filling from crumbling.
  • Seasoning: A delicate pinch of kosher salt and a few turns of cracked black pepper are used to season the filling. Exercise caution with salt, as both the pesto (if homemade and not already accounted for) and Parmesan cheese are inherently salty.
  • Parsley: Freshly chopped parsley serves as a bright, herbaceous garnish, adding a touch of color and a fresh, clean finish to the rich dish.

Variations & Customizations

This Pesto Whipped Ricotta Stuffed Shells recipe is wonderfully versatile, allowing for numerous adjustments to suit your personal preferences or dietary needs. Feel free to get creative and make it your own!

  • Spinach Preparation: While whipping the spinach into the ricotta creates a seamless texture and ensures even distribution of veggies, you can opt for a simpler approach. Instead of blending, finely chop wilted spinach and fold it directly into the ricotta mixture. Remember to thoroughly squeeze out any excess moisture from the wilted spinach, regardless of the preparation method, to prevent a watery filling.
  • Sauce Alternatives: If pesto isn’t your preference, or you’re looking for a more traditional flavor, Delallo’s marinara sauce makes an excellent substitute for the creamy pesto sauce. You can also create a rosé sauce by combining marinara with a splash of heavy cream for a lighter, creamy option. For a richer, meatier sauce, consider adding ground Italian sausage or lean ground beef to your marinara base.
  • Add Protein: To make this dish even heartier, consider adding cooked, shredded chicken breast, crumbled Italian sausage, or sautéed shrimp to the creamy pesto sauce or even directly into the ricotta filling. This transforms it into a complete one-dish meal.
  • Different Vegetables: Beyond spinach, you can experiment with other finely chopped or puréed vegetables in the ricotta filling. Sautéed mushrooms, roasted red peppers, sun-dried tomatoes, or even finely grated zucchini (ensuring excess moisture is removed) could add different flavor dimensions and nutritional value.
  • Cheese Blend Variations: While mozzarella, ricotta, and Parmesan are a classic trio, feel free to swap or add other cheeses. Asiago, provolone, or even a touch of goat cheese could introduce unique flavors. For a sharper profile, add some grated Pecorino Romano to the filling.
  • Homemade Pesto: If you have fresh basil and time, making your own pesto from scratch will yield an exceptionally vibrant and fresh flavor. Blend fresh basil, pine nuts (or walnuts), garlic, Parmesan cheese, and olive oil for a truly artisanal experience.
  • Gluten-Free Option: For those with gluten sensitivities, many brands now offer gluten-free jumbo pasta shells. Simply follow the package instructions for cooking, and the rest of the recipe remains the same.

How to Make Pesto Whipped Ricotta Stuffed Shells

Creating these delightful Pesto Whipped Ricotta Stuffed Shells is a straightforward process, broken down into simple, manageable steps. Before you begin, ensure your oven is preheated to a cozy 375 degrees Fahrenheit (190 degrees Celsius), setting the stage for perfectly baked shells.

Prepare the Pasta

Step 1: Begin by bringing a large pot of water to a rolling boil. Generously season the water with kosher salt – this is your only chance to flavor the pasta from within. Cook the jumbo pasta shells according to the package directions, ensuring they are cooked al dente. This firm texture is key, as the pasta will continue to cook and soften in the oven. Once cooked, drain the pasta thoroughly and toss immediately with a drizzle of olive oil to prevent any sticking, setting them aside to cool slightly.

Step 2: In a large sauté pan, heat avocado oil over medium-high heat. Add the finely diced onion and minced garlic. Sauté gently until the onions are translucent and fragrant, and the garlic is lightly golden, typically 3-5 minutes. Season this aromatic base with a few turns of freshly cracked black pepper.

Step 3: Pour in the low sodium chicken broth, allowing it to deglaze the pan and scrape up any flavorful browned bits. Let the broth reduce by about one-quarter, concentrating its flavors. Then, stir in the rich heavy cream and the star of the show, your chosen pesto. Whisk everything together until thoroughly combined and smooth.

Step 4: Incorporate the grated Parmesan cheese into the simmering sauce. Continue to whisk gently until the Parmesan is completely melted and evenly integrated, adding a wonderful depth of flavor and contributing to the sauce’s creaminess.

Step 5: Reduce the heat to medium-low and allow the sauce to gently simmer. Stir frequently to prevent sticking, and let it thicken to your preferred consistency. A slightly thicker sauce will cling beautifully to the shells.

Step 6: Lightly spray a hot pan with avocado oil. Add the baby spinach, ensuring it’s spread in a single layer if possible, which helps it wilt evenly.

Step 7: Sauté the baby spinach just until it has completely wilted and softened. Remove it from the heat and allow it to cool thoroughly before proceeding to the next step. Cooling prevents the heat from cooking the egg in the ricotta mixture.

Step 8: Transfer the pre-drained ricotta cheese and the cooled, wilted spinach to a food processor or blender. This step is crucial for achieving that “whipped” texture.

Step 9: Pulse and blend the mixture until it becomes completely smooth and wonderfully creamy. This whipping action introduces air, making the filling light and fluffy.

Step 10: Transfer the whipped ricotta-spinach mixture to a cheesecloth and gently but firmly squeeze out any remaining excess moisture. This critical step prevents the stuffed shells from becoming watery during baking, ensuring a rich, concentrated flavor.

Step 11: Place the now firm and creamy ricotta-spinach mixture into a clean mixing bowl. Add the shredded mozzarella, grated Parmesan, the large egg, and a few turns of black pepper. You may add a tiny pinch of kosher salt, but remember pesto and cheeses are already salty.

Step 12: Use a spoon or your hands (gloves recommended!) to thoroughly mix all the filling ingredients until they are uniformly combined. Ensure the egg is fully incorporated, as it acts as the binder.

Step 14: Carefully take each cooked jumbo shell and spoon or pipe a generous amount of the whipped ricotta-spinach filling into it. Arrange the stuffed shells snugly in a single layer within the prepared baking dish. You should be able to fit approximately 15 shells.

Step 15: Drizzle any remaining creamy pesto sauce over the stuffed shells, then generously sprinkle with extra shredded mozzarella cheese. Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 30 minutes, allowing the flavors to meld and the pasta to finish cooking.

Expert Tips for this Stuffed Shell Recipe

  • Master the Al Dente Pasta: Cooking the pasta shells al dente (meaning “to the tooth” – firm to the bite) is perhaps the most crucial tip. Since the shells will continue to cook and absorb moisture in the oven, undercooking them slightly ensures they don’t become mushy or fall apart during baking, retaining that satisfying chew.
  • Choose the Right Bakeware: Always opt for a ceramic baking dish over glass when using a broiler. Ceramic dishes are designed to withstand higher, direct heat, reducing the risk of cracking or shattering that can occur with glass bakeware under the intense heat of a broiler.
  • Prevent Watery Ricotta Filling: Ricotta cheese naturally contains a lot of moisture, which it tends to release during baking, potentially leading to a runny filling. To combat this, meticulously drain the ricotta using a mesh strainer for at least 15-20 minutes, or even better, wrap it in a cheesecloth and gently squeeze out as much liquid as possible. This step, combined with squeezing moisture from the wilted spinach, guarantees a firm, flavorful, and perfectly textured filling.
  • Mind the Salt Balance: Pesto and Parmesan cheese are both inherently salty ingredients. Be very conservative when adding additional salt to the ricotta filling and choose low-sodium chicken broth for the sauce. Always taste your components before adding extra salt, adjusting only if absolutely necessary, to avoid an overly salty dish.
  • Boil Extra Shells: Pasta shells can be fragile. It’s always a good idea to boil a few extra jumbo shells (2-3 more than needed) than the recipe calls for. This way, if any shells break or tear during the cooking or stuffing process, you have spares readily available.
  • Make Ahead Option: This dish is fantastic for meal prepping! You can assemble the stuffed shells completely, cover them tightly with foil, and refrigerate for up to 24 hours before baking. When ready to bake, add an extra 10-15 minutes to the covered baking time to ensure it heats through evenly.
  • Freezing Instructions: For a future quick meal, assemble the shells in a freezer-safe baking dish, cover tightly with plastic wrap and then foil, and freeze for up to 2-3 months. To bake from frozen, remove the plastic wrap, cover with foil, and bake at 375°F for about 60-75 minutes, then uncover and broil until bubbly.
  • The Art of Broiling: When it’s time to broil, keep a close eye on your shells! Broilers can brown cheese very quickly. A few minutes is usually all it takes to get that irresistible golden, bubbly, slightly charred cheese topping. Don’t walk away!

Frequently Asked Questions

What are the best side dishes to serve with Pesto Whipped Ricotta Stuffed Shells?

These flavorful stuffed shells pair beautifully with a light, fresh salad to balance the richness. Consider serving them with my crisp Zucchini Salad, a robust Ultimate Caesar Salad, or a delicate Butter Lettuce Salad Recipe. A side of crusty garlic bread is also always a welcome addition for soaking up every last bit of the delicious creamy pesto sauce.

Should I add egg to my ricotta cheese filling? What is its purpose?

Yes, absolutely! Adding a large egg to your ricotta cheese filling is a vital step. The egg acts as a natural binder, helping to hold all the cheeses and spinach together as the shells bake. Without it, the filling might become crumbly and fall out of the shells, whereas the egg ensures a cohesive, creamy texture.

Is straining ricotta cheese necessary for stuffed shells, and how do I do it?

Yes, straining your ricotta cheese is highly recommended for the best results! Ricotta has a high water content, and if not removed, this moisture will be released during baking, making your stuffed shells watery and runny. To strain, you can place the ricotta in a fine-mesh strainer set over a bowl for at least 15-20 minutes, allowing the excess liquid to drip out. For an even more effective method, wrap the ricotta in a clean cheesecloth and gently squeeze to press out as much moisture as possible. This extra step guarantees a rich, firm, and incredibly delicious filling.

Can I freeze Pesto Whipped Ricotta Stuffed Shells for later?

Yes, these stuffed shells freeze beautifully! You can assemble the entire dish in a freezer-safe baking dish, ensuring it’s well-covered with both plastic wrap and aluminum foil to prevent freezer burn. They can be stored in the freezer for up to 2-3 months. When you’re ready to enjoy them, simply bake directly from frozen, removing the plastic wrap and keeping the foil on for the initial baking phase, then removing it to brown the cheese. This makes them an ideal make-ahead meal option!

How can I make this recipe gluten-free?

Making these pesto whipped ricotta stuffed shells gluten-free is very simple. The only ingredient you need to substitute is the pasta shells. Many brands now offer high-quality gluten-free jumbo pasta shells that cook similarly to traditional wheat pasta. Just follow the package instructions for cooking time, and the rest of the creamy pesto sauce and ricotta filling ingredients are naturally gluten-free.

Equipment

  • 1 8×8-inch ceramic baking dish
  • 1 cheesecloth
  • 1 mixing bowl
  • 1 pasta pot with colander
  • 1 saute pan

Ingredients

Creamy Pesto Sauce

  • 1.5 tablespoons avocado oil
  • ¾ cup onions, finely diced (yellow or sweet work best)
  • 1 teaspoon garlic, freshly minced, about 2-3 cloves
  • few turns cracked black pepper
  • 1 cup low sodium chicken broth
  • ½ cup heavy cream
  • 2 tablespoons pesto, Delallo brand traditional basil, mixed well
  • 2 tablespoons parmesan cheese, grated

Shells and Filling

  • 15 jumbo shells, cooked al dente, plus a few extra in case of breakage
  • 15 ounces whole milk ricotta, pour off excess liquid or strain thoroughly with cheesecloth
  • 5 ounces baby spinach, wilted in a pan and thoroughly strained of excess liquid
  • 1 large egg
  • 1 cup shredded mozzarella, plus extra for topping before baking
  • ¼ cup parmesan cheese, grated
  • few turns cracked black pepper, to season (start with less, taste and adjust)
  • pinch kosher salt, to LIGHTLY season (remember pesto & cheese are salty)

Instructions

How to Make Pesto Whipped Ricotta Stuffed Shells

  • Preheat your oven to 375 degrees Fahrenheit (190°C). This ensures the oven is at the correct temperature for even baking from the moment you put the dish in.

Boil the Pasta

  • Bring a large pot of water to a rolling boil. Season it generously with kosher salt to properly flavor the pasta. Cook the jumbo pasta shells according to the package instructions until they are al dente. This firm texture is crucial as they will continue cooking in the oven. Drain the pasta immediately and drizzle with olive oil, gently tossing to prevent them from sticking together. Set aside to cool slightly.

Make the Creamy Pesto Sauce

  • Place a sauté pan over medium-high heat. Add the avocado oil. Once the oil is shimmering, add the finely diced onions and minced garlic. Sauté, stirring occasionally, until the onions are tender and translucent and the garlic is fragrant, typically 3-5 minutes. Season lightly with cracked black pepper.

Deglaze the pan by pouring in the low-sodium chicken broth, scraping up any browned bits from the bottom of the pan. Let the broth simmer and reduce by about one-quarter, concentrating its savory flavor. Next, stir in the heavy cream and the pesto, whisking until well combined. Finally, add the grated Parmesan cheese, whisking continuously until it has fully melted into the sauce. Allow the sauce to simmer gently over medium-low heat, stirring frequently, until it reaches your desired thickness. A slightly thicker sauce will adhere better to the shells.

Prepare the Whipped Ricotta Filling

  • In a separate hot pan, lightly sprayed with avocado oil, add the baby spinach. Sauté until the spinach is completely wilted and softened. Remove it from the heat and let it cool completely to prevent it from cooking the egg in the next step.

Once cool, combine the drained ricotta cheese and the wilted spinach in a food processor. Pulse and buzz until the mixture is completely smooth and creamy. This creates the “whipped” texture. Transfer the whipped ricotta-spinach mixture to a cheesecloth and gently but firmly squeeze out any excess moisture. This is a critical step to ensure your filling isn’t watery.

  • Add the strained ricotta-spinach mixture to a mixing bowl. Incorporate the shredded mozzarella cheese, grated Parmesan cheese, the large egg, and a few turns of cracked black pepper. If you desire, add a very small pinch of kosher salt, but be cautious as pesto and Parmesan cheese are already well-seasoned. Mix all the ingredients thoroughly until they are well combined and uniform.

Assemble and Bake

  • Spoon or ladle a generous layer of the creamy pesto sauce onto the bottom of your 8×8-inch ceramic baking dish, spreading it evenly. Carefully stuff each cooked jumbo shell with a generous amount of the whipped ricotta-spinach filling. Arrange the stuffed shells snugly in the prepared baking dish in a single layer. You should comfortably fit about 15 shells. Drizzle any remaining creamy pesto sauce over the arranged shells and then generously sprinkle with the remaining shredded mozzarella cheese.

Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 30 minutes. This allows the shells to heat through and the flavors to meld beautifully. After 30 minutes, carefully remove the foil and broil the dish for 2-3 minutes, watching closely, until the cheese on top is gloriously melted, bubbly, and lightly golden brown. Garnish with freshly chopped parsley immediately before serving hot.

Notes

How to Store & Reheat:

Store any leftover Pesto Whipped Ricotta Stuffed Shells in an airtight container in the refrigerator for up to 4-5 days. To reheat, simply place your desired portion in the microwave and warm through until piping hot. For best results and to help soften the pasta, you can add a splash of water or a little extra chicken broth to the bowl before microwaving. For oven reheating, cover with foil and bake at 350°F until heated through, then uncover for a few minutes to crisp the cheese.
