The Secret to Our Creamy Dairy-Free Sour Cream Sauce

The heart of these outstanding enchiladas is the incredibly rich and creamy green chile sour cream sauce. The magic ingredient here? Raw cashews! When properly soaked and blended, cashews create an astonishingly smooth, thick, and luxurious base that mimics dairy sour cream beautifully.

Paired with vibrant canned green chiles, which bring a delightful tang and a subtle hint of spice, this sauce is pure perfection. The chiles contribute a complex, earthy flavor that elevates the entire dish, making it undeniably Mexican-inspired. With just raw cashews, canned green chiles (including their juices), water, and a pinch of salt, you can whip up this extraordinary sauce in minutes. It’s not just for enchiladas; imagine it drizzled over tacos, burritos, or even as a dip!

Tips for the Best Cashew Cream Sauce:

  • Soaking is Key: To achieve ultimate creaminess, it’s essential to soak your raw cashews. The quickest method is to cover them with boiling hot water and let them sit for 5 minutes. Alternatively, you can boil them in a small pot for 5 minutes. This softens them, allowing them to blend into a perfectly smooth consistency without any gritty texture.
  • High-Powered Blender: For the silkiest sauce, a high-speed blender is highly recommended. Blend until absolutely smooth, stopping to scrape down the sides as needed to ensure all cashews are incorporated.
  • Adjust Consistency: If your sauce is too thick, add a tablespoon or two of water at a time until it reaches your desired pourable yet creamy consistency.

Crafting the Perfect Roasted Vegetable Filling

The robust and flavorful filling is what makes these enchiladas truly special. We start with a simple yet incredibly satisfying combination of roasted vegetables. Roasting isn’t just a cooking method; it’s a flavor enhancer. The high heat of the oven caramelizes the natural sugars in the vegetables, intensifying their taste and giving them a tender-crisp texture that holds up beautifully inside the tortillas.

Our chosen medley includes:

  • Zucchini: Adds a soft texture and absorbs flavors wonderfully.
  • Onion: Provides aromatic depth and a touch of sweetness when roasted.
  • Corn: Brings pops of sweetness and a pleasant chewiness.
  • Cauliflower: This cruciferous vegetable is a fantastic stand-in for chicken in plant-based dishes. When roasted, it develops a slightly nutty flavor and a tender, almost “meaty” texture, soaking up all the delicious seasonings.

For those who enjoy a mock meat texture, you have the option to substitute the cauliflower with a package of vegan “chik’n” nuggets, such as Gardein brand. Simply chop them into bite-sized pieces and roast them alongside the other vegetables to achieve a similar browned and flavorful result.

Once the vegetables are beautifully roasted and tender, they are combined in a large bowl with a can of drained and rinsed black beans. Black beans add a fantastic source of plant-based protein, fiber, and an earthy richness that complements the roasted veggies.

To complete the filling, a touch of adobo sauce from a can of chipotle peppers is mixed in. This magical ingredient introduces a smoky, slightly spicy, and deeply savory note that ties all the flavors together. If you or your guests are sensitive to spice, you can certainly omit the adobo sauce without compromising too much on flavor, but it truly adds an authentic Mexican dimension. Finally, about ½ cup of the prepared sour cream sauce is folded into the filling, adding an extra layer of creaminess and ensuring every bite is moist and flavorful.

Choosing Your Tortillas: Flour vs. Corn

When it comes to enchiladas, the choice of tortilla can significantly impact your cooking experience and the final dish. Both flour and corn tortillas have their unique advantages, and you can certainly use whichever you prefer for this recipe.

Flour Tortillas:

  • Ease of Use: Flour tortillas are generally easier to work with. They are pliable right out of the package, meaning you don’t typically need to pre-warm them before filling and rolling.
  • Holds More Filling: Their larger size and stretchy nature often allow them to hold a more substantial amount of filling, which can be great if you love generously packed enchiladas.
  • Easier to Roll: Their flexibility makes them less prone to tearing or breaking during the rolling process, reducing potential frustration in the kitchen.

Corn Tortillas:

  • Authentic Flavor: Many argue that corn tortillas offer a more traditional and authentic flavor profile for enchiladas. They have a distinct earthy taste that complements the rich sauce and filling beautifully.
  • Gluten-Free Option: For those with gluten sensitivities or preferences, corn tortillas are a natural gluten-free choice.
  • Requires Pre-Warming: The main consideration with corn tortillas is that they tend to be less flexible and can crack or break if not properly warmed. To prevent this, wrap them in damp paper towels and microwave them for about 1 minute, or until they are soft and pliable. This step is crucial for smooth rolling.

Regardless of your choice, ensure you have enough tortillas to use up most of your delicious filling.

Step-by-Step Assembly & Baking Guide

Assembling these dairy-free sour cream enchiladas is a rewarding process that brings all the delicious components together. Follow these steps for perfect results:

  1. Prepare Your Baking Dish: Lightly grease the bottom of a large 9×13 inch casserole dish to prevent sticking and ensure even cooking.
  2. Combine the Filling: In a spacious mixing bowl, gently combine your perfectly roasted vegetables, black beans, adobo sauce, and about ½ cup of the prepared sour cream sauce. Mix thoroughly to ensure all ingredients are well distributed and coated.
  3. Warm Tortillas (if using corn): If you opt for corn tortillas, don’t skip the warming step! Wrap them in damp paper towels and microwave for approximately 1 minute. This makes them pliable and prevents tearing. Flour tortillas do not require this pre-warming.
  4. Fill and Roll: Take one tortilla at a time. Spoon about ½ cup of the vegetable and bean filling into the center (use slightly less for smaller corn tortillas). Carefully roll up the tortilla, ensuring the filling is securely enclosed.
  5. Arrange in Dish: Place the rolled enchilada seam-side down in your prepared baking dish. Repeat this process with the remaining tortillas and filling, arranging them snugly in a single layer until the dish is full and most of the filling is used. If you have any remaining filling that doesn’t fit into tortillas, you can spoon it over the top of the enchiladas, or save it for a delicious side dish.
  6. Cover with Sauce: Generously pour the remaining dairy-free sour cream sauce over the rolled enchiladas, ensuring they are all evenly covered. The sauce will bubble and thicken slightly during baking, creating a rich topping.
  7. Bake to Perfection: Place the uncovered baking dish into your preheated oven (set to 375°F) and bake for 15-20 minutes, or until the enchiladas are heated through and the sauce is bubbly and slightly golden at the edges.
  8. Garnish and Serve: Once out of the oven, let the enchiladas rest for a few minutes. Then, for a vibrant finish and an extra burst of freshness, sprinkle generously with freshly chopped cilantro and green onions before serving.

Each step contributes to the incredible flavor and texture of these enchiladas, making them a truly satisfying meal.

Recipe: Vegan Sour Cream Enchiladas

Amazing Sour Cream Enchiladas with no dairy or meat! They are filled with a mix of roasted vegetables and beans, and covered in a flavorful and rich sour cream sauce. Easy and delicious!

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 1 hour

Servings: 8 servings

Ingredients

Roasted Vegetables

  • 1 medium zucchini, diced
  • 1/2 medium onion, chopped
  • 1 1/2 cups fresh or frozen corn
  • 3-4 cups cauliflower florets (or sub vegan chik’n nuggets, cut up)
  • 2-3 tablespoons olive oil
  • 1/2 teaspoon salt

Sour Cream Sauce

  • 1 1/2 cups raw cashews
  • 8 ounces canned green chiles, including their juices
  • 1 cup water
  • 1 teaspoon salt

The Rest

  • (1) 15-oz can black beans, drained and rinsed (1 1/2 cups)
  • 2 tablespoons adobo sauce, from a can of chipotle in adobo*
  • 1/2 teaspoon salt, or to taste
  • 12 medium-sized flour tortillas, OR 15-20 corn tortillas
  • Optional: chopped cilantro and green onions, for serving

Instructions

Roast the vegetables

  1. Preheat the oven to 425 degrees F. Add the zucchini, onion, corn and cauliflower (or vegan chik’n nuggets) to a large rimmed pan.
  2. Drizzle with olive oil, sprinkle with salt, give the mixture a little stir then spread out evenly. Roast in the oven for 20-30 minutes. Remove from the oven and set aside.
  3. Turn down the oven to 375 degrees F.

Make the sour cream sauce while the vegetables are roasting

  1. Soak the cashews – In a bowl or measuring cup, cover the raw cashews with boiling hot water and let soak for 5 minutes. You can also simply boil them for 5 minutes in a small pot.
  2. Drain the cashews and add to a high powered blender along with the canned green chiles, 1 cup of water and salt. Blend until very smooth and creamy, scraping down the sides of the blender as needed. Set aside.

Assemble the enchiladas

  1. Lightly grease the bottom of a large 9 x 13 inch casserole dish.
  2. In a large bowl, add the roasted vegetables, black beans, adobo sauce, 1/2 cup of the sour cream sauce and salt. Mix well with a large spoon.
  3. If you are using corn tortillas, warm them by wrapping them in damp paper towels and microwaving for 1 minute. No need to do this with flour tortillas.
  4. Fill each tortilla with approximately 1/2 cup of the filling (less if using small corn tortillas) and roll up carefully. Place seam side down in the baking dish. Repeat until the dish is full and you have used nearly all of the filling. Top with the rest of the sour cream sauce, and spoon the remaining filling on top, in the middle, if desired. Or save and eat separately, it’s delicious!
  5. Place the enchiladas in the oven and bake, uncovered for 15-20 minutes or until hot.
  6. Serve with chopped cilantro and green onions, if desired. Enjoy!

Notes

  1. You can substitute vegan chik’n nuggets for the cauliflower if desired. I like Gardein brand. Simply slice them up and bake with the vegetables.
  2. The adobo sauce makes the filling very flavorful and a bit spicy, so if you are serving this to kids or people sensitive to spice, you may omit this. (You can usually find it near the jarred jalapeños, in the Mexican section at the grocery store.)
  3. Leftovers will last in the refrigerator for 3-4 days.
  4. To freeze: I would recommend assembling the enchiladas without the sour cream sauce, then freezing in a dish. When you are ready to cook them, thaw overnight in the refrigerator, then cover in sour cream sauce and bake. The sauce may get too thick otherwise.
