Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Pulse the 1/2 cup pistachios in a food processor until they are finely ground, almost forming a paste. Set aside.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  4. In a large bowl, use a hand mixer (or a stand mixer with a paddle attachment) to cream the softened butter, brown sugar, and granulated sugar on high speed for 2-3 minutes until light and fluffy.
  5. Add the egg yolks, vanilla extract, and the finely ground pistachios to the creamed butter mixture. Mix on medium speed for 1-2 minutes until the mixture turns pale and fluffy. Scrape down the bowl as needed to ensure everything is well combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.
  7. Gently fold in the 6 oz milk chocolate chips (or dark chocolate chunks) and the 1/2 cup roughly chopped pistachios with a spatula until evenly distributed.
  8. Scoop the dough using a cookie scoop (about 2 tablespoons per cookie) and place them about 2 inches apart on the prepared baking sheets.
  9. Bake for 10-12 minutes. For chewier cookies, bake for 10 minutes until the edges are lightly golden and the centers are still slightly soft. For a crispier texture, bake for 12 minutes until the edges are golden brown.
  10. Let the cookies rest on the baking sheet for 5 minutes after removing from the oven. This allows them to firm up slightly.
  11. Transfer the cookies to a wire rack to cool completely. While the cookies are still warm, you can gently press additional chocolate chips, chopped pistachios, and a sprinkle of flaky sea salt onto each cookie for extra texture and visual appeal. For a more uniform round shape, use a large round cookie cutter to gently swirl around the warm cookies as they cool.
