Nutritious & Incredibly Satisfying
Beyond its delicious taste and visual appeal, this Pesto Eggs Breakfast Tray is a nutritional powerhouse designed to fuel your body and keep hunger at bay. The eggs provide a complete protein source, essential for muscle repair and sustained energy. Pesto, typically made with basil, pine nuts, and olive oil, offers healthy fats and antioxidants. Avocados are rich in monounsaturated fats, promoting heart health and satiety. Fresh alfalfa sprouts contribute vitamins and minerals, while multigrain bread provides complex carbohydrates for lasting energy. The simple salad adds essential fiber and micronutrients, rounding out a truly balanced and wholesome meal. This combination ensures you’ll feel full and satisfied, avoiding those mid-morning energy slumps.

Most components require minimal cooking, making it an ideal choice for busy weekdays or relaxed weekend brunches. The process is designed to be efficient, allowing you to enjoy a high-quality breakfast without spending hours in the kitchen.
Essential Recipe Ingredients
Crafting the perfect Pesto Eggs Breakfast Tray begins with selecting high-quality ingredients. Here’s a closer look at what you’ll need and some tips for each:
- Eggs: The foundation of our dish! Always opt for fresh, high-quality eggs. Pasture-raised or free-range eggs often have richer yolks and superior flavor. For this recipe, we’ll pan-fry them, but you can also use scrambled, poached, or soft-boiled eggs for variety, drizzled with a touch of pesto.
- Pesto: This is where the magic happens! I highly recommend using Delallo’s jarred pesto, which offers a robust, authentic flavor that works wonderfully with eggs. If you prefer, homemade pesto is also an excellent option. When choosing a store-bought brand, look for one with high-quality ingredients and a vibrant green color. Some pestos can be oilier than others, so adjust the added olive oil accordingly.
- Olive Oil: A splash of good quality extra virgin olive oil is crucial for both cooking the eggs and dressing the salad. It adds a fruity depth and helps achieve that perfect pan-fried texture.
- Cheese: Freshly grated white cheddar cheese adds a creamy, sharp finish to your pesto eggs. Its mild flavor complements the pesto without overpowering it. Feel free to experiment with other cheeses like Parmesan, feta, or even a sprinkle of goat cheese for a different profile.
- Avocado: A healthy fat hero! Select a ripe avocado that yields slightly to gentle pressure. It adds a creamy texture and a wealth of nutrients. We’ll be thinly slicing it for elegant presentation and easy eating.
- Alfalfa Sprouts: These delicate sprouts add a fresh, slightly nutty flavor and a delightful crunch. They’re also packed with vitamins and minerals, making them a fantastic healthy addition. If you can’t find alfalfa, microgreens or baby spinach are good alternatives.
- Multigrain Bread: Toasted multigrain bread provides a hearty, fiber-rich base. The nutty flavor and satisfying chewiness pair beautifully with the eggs and avocado. Sourdough, whole wheat, or gluten-free bread can also be used.
- Mixed Greens: A handful of fresh mixed greens forms the base of our simple, refreshing side salad. Choose your favorite blend, such as spring mix, baby kale, or even romaine lettuce.
- Lemon Juice: Freshly squeezed lemon juice is essential for brightening the flavors of the salad dressing and adding a zesty kick.
- Radish: Thinly sliced radish adds a peppery bite and a beautiful pop of color to the salad. Use a mandoline for perfectly uniform, thin slices.
- Kosher Salt & Black Pepper: These pantry staples are used to season each component, bringing out their natural flavors. Adjust quantities to your personal taste.
- Butter: Used to pan-fry the bread, giving it a golden, crispy texture and rich flavor.
How to Craft Your Pesto Eggs Breakfast Tray
Creating this delicious and healthy breakfast tray is straightforward. Follow these steps for a perfectly assembled and flavorful meal:
Step 1: Prepare Your Tray
Start by grabbing a ¼ sheet baking tray. For easy cleanup and to prevent sticking, you have the option to line it with a sheet of parchment paper. Set this tray aside, as it will be your canvas for assembling all the delicious components.
Step 2: Assemble the Simple Salad
In a small mixing bowl, combine a generous handful of fresh mixed greens. Drizzle them lightly with extra virgin olive oil and a squeeze of fresh lemon juice. This simple dressing enhances the natural flavors of the greens without making them heavy. Season with a pinch of kosher salt and freshly ground black pepper to taste. Gently toss the salad until the greens are evenly coated. Transfer the dressed salad to a corner of your prepared baking tray. For an elegant touch and a hint of peppery crunch, thinly slice a fresh radish using a mandoline or a very sharp knife and arrange the slices beautifully over the top of the salad.
Step 3: Prepare the Everything-But-The-Bagel Avocado
Take half of a small, ripe avocado. Carefully peel and pit it, then thinly slice the avocado into even pieces. Arrange these slices artfully on another section of your breakfast tray. Generously sprinkle the sliced avocado with “everything but the bagel” seasoning for an explosion of savory flavor and texture. Finish by scattering a tablespoon of fresh alfalfa sprouts over the avocado for a burst of green and a delicate crunch.
Step 4: Toast the Multigrain Bread
Spread a thin, even layer of butter on one side of two slices of multigrain bread. Heat a non-stick pan over medium heat. Once warm, place the buttered bread slices into the pan, buttered side down. Fry until each side is beautifully golden brown and perfectly toasted, achieving a crisp exterior and a soft interior. This pan-frying method gives the toast a superior texture compared to a toaster. Once ready, carefully place the toasted bread on your prepared tray.
Step 5: Cook the Pesto Eggs to Perfection
Heat a nonstick skillet over medium-high heat. Add a tablespoon of olive oil to the pan. Once the oil is shimmering and warm, reduce the heat slightly and add 1.5 tablespoons of Delallo pesto. Mix the pesto well with the warm oil, allowing its aromatic flavors to develop (be careful not to burn the pesto). Immediately crack two or three fresh eggs directly into the pesto mixture, depending on your desired serving size and egg preference. Pan fry the eggs to your liking – whether you prefer a runny yolk, firm whites, or somewhere in between. The pesto will infuse into the whites and edges of the eggs, creating a beautiful marbling and an incredible flavor. Once cooked, gently transfer the pesto eggs to your prepared tray. For a final touch of richness, generously top the hot eggs with freshly grated white cheddar cheese, allowing it to melt slightly from the residual heat. Serve your exquisite Pesto Eggs Breakfast Tray hot and savor every delicious bite!
Variations and Serving Suggestions
The beauty of the Pesto Eggs Breakfast Tray lies in its adaptability. Here are some ideas to inspire you:
Creative Variations for Your Pesto Eggs
- Protein Power-Ups: Enhance your tray with cooked breakfast sausage links, crispy bacon strips, smoked salmon, or even grilled halloumi cheese for a Mediterranean twist.
- Vegetable Boost: Add roasted cherry tomatoes, sautéed mushrooms, bell pepper strips, or a handful of fresh spinach (which can be wilted slightly with the pesto eggs).
- Different Cheeses: Instead of white cheddar, try crumbled feta cheese, shaved Parmesan, or soft goat cheese for varying flavor profiles.
- Herbaceous Additions: Fresh basil leaves, chopped chives, or a sprinkle of red pepper flakes can elevate the flavor and presentation.
- Bread Alternatives: Experiment with sourdough, rye bread, gluten-free toast, or even a warm whole-wheat tortilla for a breakfast wrap style.
- Pesto Diversity: While basil pesto is classic, try sun-dried tomato pesto for a different savory note, or a kale pesto for an extra nutrient boost.
How to Serve Your Breakfast Tray
- Brunch Extravaganza: Create multiple trays with different variations for a stunning brunch spread. Guests can mix and match to their heart’s content.
- Weeknight Breakfast-for-Dinner: Don’t limit this delicious meal to mornings! It makes a quick, satisfying, and light dinner option, especially when you’re short on time.
- Pairing Perfection: Serve alongside a freshly brewed coffee, a vibrant green smoothie, or a glass of freshly squeezed orange juice.
- Make it a Bowl: For a grain-free option, serve the pesto eggs and toppings over a bed of mixed greens or quinoa, turning it into a hearty breakfast bowl.
Storage Tips
While the Pesto Eggs Breakfast Tray is absolutely best enjoyed immediately for optimal freshness and texture, some components can be prepped ahead:
- Salad Greens: Wash and dry mixed greens and radish slices and store them in separate airtight containers in the refrigerator for up to 2-3 days. Dress just before serving.
- Avocado: Avocado is best sliced right before serving to prevent browning. If you must pre-slice, toss with a little lemon juice and store in an airtight container, pressing plastic wrap directly onto the surface of the avocado to minimize air exposure.
- Pesto Eggs: Cooked pesto eggs are best fresh. Reheating can alter their texture and flavor, making them less appealing.
- Toast: Toast should always be made fresh just before serving to ensure crispness.
By prepping certain elements, you can significantly reduce morning assembly time, making this healthy breakfast tray even more convenient.

Frequently Asked Questions About Pesto Eggs
Can I use other types of eggs for this breakfast tray?
Absolutely! While pan-fried eggs cooked directly in pesto offer a unique flavor and visual appeal, you can certainly customize your egg preparation. Scrambled eggs, fluffy poached eggs, or even perfectly boiled eggs (soft or hard, to your preference) would work wonderfully on this tray. Just remember to drizzle your preferred egg type with a touch of pesto for that signature flavor, or serve the pesto on the side for dipping.
Can I make this Pesto Eggs Breakfast Tray for dinner?
Without a doubt! Breakfast for dinner is a popular and delicious concept, and this Pesto Eggs Breakfast Tray fits the bill perfectly. It’s a light yet satisfying meal that comes together quickly, making it ideal for busy weeknights when you want something flavorful and comforting without a lot of fuss. It’s a complete meal that feels gourmet but is incredibly simple.
Is this recipe suitable for meal prepping?
While some components are best fresh (like the eggs and toast), you can certainly prep parts of the tray ahead of time to make your mornings smoother. You can wash and chop your mixed greens and radishes, prepare your avocado (if you don’t mind a slight color change, or use lemon juice to delay browning), and have your pesto ready. This way, in the morning, all you need to do is quickly cook your eggs and toast the bread, significantly cutting down on prep time.
What kind of pesto is best for this recipe?
The original recipe specifically mentions Delallo pesto, which is known for its quality and robust flavor. However, feel free to use your favorite store-bought basil pesto or even homemade pesto. If you’re using homemade pesto, you might find it has a richer olive oil content, so you may need to adjust the amount of added olive oil when cooking the eggs. Experiment with different brands or make your own for a truly personalized touch!
Can I make this recipe dairy-free or vegan?
To make it dairy-free, simply use a dairy-free pesto (many brands offer this, or make your own without Parmesan cheese) and omit the white cheddar cheese. For a vegan version, you would replace the eggs with a plant-based egg substitute (like a tofu scramble or a commercial vegan egg product) and ensure your pesto and bread are vegan-friendly. The avocado, sprouts, toast, and salad components are naturally vegan-friendly, assuming butter is replaced with a vegan spread for toast.
