- 2 cups broccoli florets
- 1 cup cherry tomatoes
- 1 yellow bell pepper, chopped
- 1 small zucchini, sliced and chopped
- 1/2 red onion, chopped
- 2 tablespoons extra virgin olive oil, divided
- 2 teaspoons Italian seasoning, divided
- 1 teaspoon minced garlic (or garlic powder)
- Freshly ground black pepper, to taste
- Sea salt, to taste
- 1/2 Lemon, juiced, for serving
- Fresh herbs, chopped, for garnish (e.g., parsley, basil)
