These Bacon Egg and Cheese Chicken Cutlets are a delicious way to start the day. The tender chicken cutlets are coated in a combination of parmesan cheese, breadcrumbs and crispy bacon. Yes, you read that right! I added the crispy bacon right into the breadcrumb mixture. It is NEXT level good!!

Equipment

  • 2 sheets parchment paper
  • 1 meat mallet
  • 2 pans one for bacon, one for cutlets
  • 1 mini chopper
  • 3 plates for breading

Ingredients

  • 1 lb. chicken breasts, butterfly and pound into 4 thin cutlets
  • kosher salt, to season the cutlets
  • cracked black pepper, to season the cutlets
  • 2 eggs, for breading, plus more for the sandwiches
  • ½ cup grated parmesan cheese
  • cup panko breadcrumbs
  • cup Italian breadcrumbs
  • cup bacon, cooked bacon crumbles
  • avocado oil, as needed, for shallow frying
  • 8 slices cheese, cheese of choice

Instructions

How to Make

  1. Add about 5 slices of center cut bacon to a pan. Cook until just crispy. It should have a slight give when you pick it up.

    You do not want it to be so crispy that it immediately snaps in half. This is because it will continue to cook when added to the cutlets.

  2. Remove the bacon from the pan and pat off any excess grease with a paper towel. Make sure you get off as much grease as possible. Add the bacon to a mini chopper and chop into small crumbles. Set aside.
  3. Add two whisked eggs to one plate. Add the grated parmesan cheese, panko, Italian breadcrumbs and bacon crumbles to the second plate. Mix the breadcrumbs together until combined.
  4. Grab two chicken breasts and butterfly them into four thin cutlets. Place the cutlets between parchment paper or add them to a sealable bag. Gently pound the chicken using a meat mallet, until it is thin and even.
  5. Next, pat the chicken dry with a paper towel. Season both sides with kosher salt and cracked black pepper.
  6. Run the cutlets through the whisked egg followed by the breading. Make sure each piece is well coated in the egg and breading. Repeat for all four cutlets.
  7. Next heat a thin layer of avocado oil in your pan. It should cover the bottom of your pan. Once hot, but not smoking, add two chicken cutlets at a time. Do not overcrowd the pan. Shallow fry until cooked through and golden brown on both sides.
  8. Pull the chicken from the pan and place it on a paper towel for 10-15 seconds. This removes excess grease. Then quickly place it to a cooling rack to finish cooling. Repeat for all cutlets.

    Cooking time will vary slightly based on the thickness of the chicken. The internal temperature should reach 165-degree Fahrenheit to ensure doneness.

  9. Next, take half of a chicken cutlet and add it to a pan. Top it with cheese and cover with a lid. Once the cheese is melted, top the cutlet with a fried egg, chopped chives and a few turns of cracked black pepper. Serve and enjoy.

    Cutting the cutlets in half will make 8 sandwiches.
