Mastering the Art of Vegan Marry Me Pasta

Crafting this incredible vegan pasta is surprisingly simple. Follow these straightforward steps to achieve a dish that will impress every time:

(For precise measurements, refer to the detailed recipe card below.)

1. Prepare the Pasta: Begin by bringing a large pot of generously salted water to a rolling boil. Add your chosen pasta (farfalle, penne, or fettuccine work beautifully here) and cook according to package instructions until it reaches a perfect al dente texture – tender yet still firm to the bite. Before draining, make sure to reserve about a cup of the starchy pasta cooking water; this liquid gold is crucial for achieving the perfect sauce consistency later. Drain the pasta and set it aside.

2. Cook Your Protein: If using vegan chicken pieces, prepare them according to the package directions. My personal preference is for Daring frozen chicken pieces, which crisp up beautifully when pan-fried in a little oil. Feel free to chop them into smaller, bite-sized pieces for easier eating. Alternatively, you can use a batch of my flavorful Baked Tofu, or even create your own homemade Vegan “Chicken” for a truly bespoke experience.

3. Build the Flavor Base: In a spacious skillet or a large pot, heat a tablespoon of olive oil over medium-low heat. Add the minced garlic and sauté for 1-2 minutes, stirring constantly, until it becomes wonderfully fragrant and lightly golden. Be careful not to burn the garlic, as this can turn bitter.

4. Infuse with Aromatics: Stir in the chopped or sliced sun-dried tomatoes, dried oregano, and red chili flakes (adjust to your preferred level of spice). Cook for another minute, allowing the spices to bloom and release their intoxicating aromas into the oil and garlic. Season with salt and freshly ground black pepper to taste.

5. Create the Creamy Sauce: Now, add the cooked vegan chicken (or your chosen protein), vegetable broth, and a tablespoon of tomato paste, stirring well to combine. Pour in the rich cashew cream (or your chosen dairy-free cream) and add the fresh baby spinach. Stir everything together until thoroughly mixed. Increase the heat to medium and bring the mixture to a gentle simmer, allowing it to cook for about 5 minutes. During this time, the sauce will thicken slightly, and the spinach will beautifully wilt into the creamy base.

6. Combine and Finish: Once the spinach has fully wilted and the sauce is simmering gently, add the drained pasta directly into the skillet. Toss vigorously to ensure every strand of pasta is thoroughly coated in the luxurious creamy sauce. If the sauce appears too thick, add small splashes of the reserved pasta cooking water, a tablespoon at a time, until it reaches your desired consistency. Finally, remove the skillet from the heat and stir in the fresh chopped basil and optional vegan parmesan cheese for an extra layer of flavor and richness.

Serve your glorious Vegan Marry Me Pasta immediately in warm bowls. Garnish with a sprinkle of extra vegan parmesan or a few fresh basil leaves for a beautiful presentation. Enjoy every single satisfying bite!

Tips for the Perfect Vegan Marry Me Pasta

  • Quality Sun-Dried Tomatoes: For the best flavor, use good quality sun-dried tomatoes packed in oil. Drain them well before chopping, but don’t discard the oil entirely – a tiny bit can add extra richness to your skillet.
  • Al Dente Pasta is Key: Overcooked pasta can turn mushy in a creamy sauce. Cook your pasta just until al dente for the best texture contrast.
  • Don’t Skimp on Garlic: Garlic is a star in this dish. Five cloves might seem like a lot, but it perfectly complements the sun-dried tomatoes and creamy base.
  • Taste and Adjust: Always taste your sauce before combining with pasta. Adjust salt, pepper, and chili flakes as needed. A squeeze of lemon juice at the end can also brighten the flavors.
  • Fresh Basil is Best: While dried basil can be used in a pinch, fresh basil adds an unparalleled freshness and aroma that truly elevates the dish. Stir it in right at the end to preserve its vibrant flavor.

Creative Variations and Customizations

  • Protein Power-Ups: Beyond vegan chicken and tofu, experiment with other plant-based proteins. Crumbled vegan Italian sausage, white beans, hearty chickpeas, savory tempeh, or rehydrated soy curls are all excellent choices. For a simpler, lighter version, omit the protein entirely.
  • Cream Alternatives: While Cashew Cream provides an incredibly rich and smooth texture, you can also use full-fat canned coconut milk (ensure it’s unsweetened and doesn’t have a strong coconut flavor) or a high-quality store-bought vegan heavy cream. For a lower-fat option, unsweetened almond milk can work, though the sauce will be less decadent.
  • Add More Veggies: Boost the nutritional content and flavor by adding other vegetables. Sautéed mushrooms, sliced bell peppers, chopped kale, or artichoke hearts would all be delicious additions. Add harder vegetables along with the garlic to ensure they cook through.
  • Spice It Up: If you love heat, increase the amount of red chili flakes. For a milder flavor, reduce or omit them. A dash of smoked paprika could also add a lovely depth.
  • Gluten-Free Option: Easily make this dish gluten-free by simply selecting your favorite gluten-free pasta. Ensure all other ingredients (like vegan chicken or broth) are certified gluten-free if strict adherence is necessary.

Serving Your Marry Me Pasta

This creamy vegan pasta is substantial and satisfying on its own, but it pairs wonderfully with a few simple sides to create a complete and delightful meal. I always recommend serving it with a freshly baked batch of my Vegan Garlic Bread – perfect for soaking up every last drop of that amazing sauce. A crisp Kale Caesar Salad or a simple green salad with a light vinaigrette provides a refreshing contrast to the richness of the pasta. You truly can’t go wrong serving it alongside any kind of crusty bread or a steamed or roasted vegetable side dish, such as asparagus or broccoli.

Storing and Reheating Leftovers

Leftovers of this Vegan Marry Me Pasta are just as delicious, if not more so, the next day! Store any cooled pasta in an airtight container in the fridge for up to 4 days. When you’re ready to enjoy it again, reheat the pasta gently in a skillet over medium-low heat. Add a splash of water, vegetable broth, or unsweetened plant-based milk to help revive the creamy sauce and prevent it from drying out. Stir frequently until heated through. While freezing is generally not recommended for creamy pasta dishes as it can alter the texture of the sauce, it will keep well in the fridge.

Frequently Asked Questions

What should I serve with Vegan Marry Me Pasta?

This creamy vegan pasta is excellent for family dinners. It pairs wonderfully with a freshly baked batch of Vegan Garlic Bread and a refreshing Kale Caesar Salad. Any crusty bread or a simple steamed or roasted vegetable side dish would also be a fantastic accompaniment.

Do I have to use vegan chicken?

Not at all! If vegan chicken isn’t available or preferred, I highly recommend using baked, pan-fried, or air fryer tofu. Other excellent protein substitutes include chickpeas, white beans, vegan Italian sausage, tempeh, soy curls, or seitan chicken pieces. The Daring brand of vegan chicken is a personal favorite.

What can I substitute for cashew cream?

The sauce will still be delicious with full-fat canned coconut milk (ensure it’s unsweetened and has no strong coconut flavor) or a good quality store-bought vegan heavy cream. For a lighter option, unsweetened almond milk can be used, though the sauce may be less rich.

How do I store the leftovers?

Leftover pasta can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, warm the pasta in a skillet over medium heat, adding a splash of water, vegetable broth, or plant-based milk to help restore the creamy consistency of the sauce.

Vegan Marry Me Pasta

Say “I do” to Vegan Marry Me Pasta! This viral creamy pasta is made with a rich sun-dried tomato sauce and vegan chicken (or tofu). An easy 30-minute meal that’s packed with amazing flavors!

Prep Time: 10 mins

Cook Time: 20 mins

Total Time: 30 mins

Servings: 4 servings

Ingredients

  • 8 ounces farfalle pasta or other favorite pasta
  • 8 ounces vegan chicken, optional (I used Daring brand)
  • 1 tablespoon olive oil
  • 5 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped or sliced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red chili flakes
  • 1/2 teaspoon salt, or more to taste
  • 1/4 teaspoon ground black pepper
  • 1 cup vegetable broth
  • 1 tablespoon tomato paste
  • 1 cup Cashew Cream or other cream (see Notes below for options)
  • 2 cups baby spinach, sliced
  • 5 fresh basil leaves, chopped
  • 1/2 cup shaved or grated vegan parmesan, optional

Instructions

  1. Bring a large pot of water to a boil and add about a teaspoon of salt. Once boiling, add the pasta and cook for around 8 minutes, until al dente (cooked but still firm, not mushy). Reserve a few cups of the pasta cooking water, then drain the pasta and set aside.
  2. If using, cook your vegan chicken according to package instructions. For Daring frozen pieces, I pan fry them in a large skillet with a little oil, then set aside on a plate nearby. I also like to chop the “chicken” a little smaller if it’s in big chunks.
  3. In the same large skillet over low-medium heat, warm the olive oil. Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant.
  4. Stir in the sun-dried tomatoes, oregano, red chili flakes, salt, and black pepper. Cook for 1 minute, allowing the flavors to meld.
  5. Now add the cooked vegan chicken, vegetable broth, tomato paste, cashew cream, and baby spinach, and stir well to combine. Bring to a gentle simmer over medium heat and cook for about 5 minutes, until warm and the spinach has wilted completely.
  6. Stir in the drained pasta and toss to coat it thoroughly in the creamy sauce. Add a bit of the reserved pasta water if needed to thin the sauce out to your desired consistency.
  7. Remove from heat and stir in the fresh chopped basil and vegan parmesan, if using. Serve immediately and enjoy!

Recipe Notes

  1. Gluten-Free: Easily make this recipe gluten-free by substituting your preferred gluten-free pasta.
  2. Vegan Chicken Alternatives: Instead of vegan chicken, you can use my baked tofu pieces, rehydrated soy curls, hearty chickpeas, savory seitan bites, vegan Italian sausage, or firm tempeh.
  3. Cream Options: Cashew Cream is my top choice for its rich texture. However, you can also use full-fat canned coconut milk (ensure it’s unsweetened) or a store-bought vegan heavy cream. For a lighter, lower-fat option, unsweetened almond milk can be used, though the sauce’s richness will be reduced.
