How to Master Your Mini Vegan Pumpkin Pies: Step-by-Step Guide

Creating these delightful mini pumpkin pies is a rewarding experience, even for novice bakers. The detailed instructions below will guide you through each stage, ensuring a successful and delicious outcome. For precise measurements and a printable version, please refer to the complete recipe section at the end of this article.

Preparing the Perfect Vegan Pie Crust

The foundation of any great pie is its crust, and these mini pies are no exception. We begin by preparing a flaky, tender vegan pie crust. I often turn to my food processor for this step as it’s incredibly efficient, but a large bowl and a pastry cutter will work just as wonderfully if you prefer a more hands-on approach. Don’t feel pressured to make everything from scratch; store-bought vegan pie crust is a perfectly acceptable and convenient option if you’re short on time or find homemade crust daunting.

Once your dough is prepared, roll it out evenly on a lightly floured surface. Aim for a thickness of about 1/4 inch, ensuring it’s neither too thin (which can lead to tearing) nor too thick (which might result in a doughy texture). Then, use a 2.5-inch round cookie cutter to stamp out your circles. If you don’t have a cookie cutter, a measuring cup rim or even a drinking glass can serve as an effective substitute for cutting the crust circles.

Next, lightly spray your mini muffin pan with a non-stick oil. Carefully line each cavity with a prepared crust circle. Gently press the dough flat against the bottom of each cup. Don’t worry if the crust doesn’t reach all the way to the top edge or if it appears slightly sunken; this rustic look adds to their homemade charm. The key is to create a solid base for your filling. Once all cavities are lined, place the muffin pan in the freezer. This crucial step helps firm up the crust, preventing it from shrinking excessively during baking and ensuring a crisp, flaky texture.

Crafting the Velvety Pumpkin Filling

While your crust chills, turn your attention to the star of the show: the pumpkin pie filling. In a blender, combine all the filling ingredients. Blend until the mixture is completely smooth and uniform. This ensures a silky-smooth texture, free of any lumps, which is essential for that classic pumpkin pie mouthfeel. If you don’t have a blender, a whisk and a large bowl will work; just make sure to mix thoroughly until everything is well incorporated and smooth.

Retrieve your chilled muffin pan from the freezer. Now, carefully spoon the pumpkin filling into each crust-lined cavity. Aim for about 1 tablespoon of filling per mini pie, filling each crust almost to the top. Be mindful not to overfill, as this could cause spillage during baking.

Baking, Cooling, and Storage Tips

Bake your mini pumpkin pies in the preheated oven for approximately 22-24 minutes. You’ll know they’re ready when the edges of the crust are lightly golden brown and the filling is set, with only a slight jiggle in the center. Avoid overbaking, as this can dry out the filling.

Once baked, allow the pies to cool in the muffin pan for about 5 minutes. This brief cooling period helps them firm up, making them easier to handle. Then, gently use a sharp knife or a small offset spatula to carefully pop each mini pie out of its cavity and transfer them to a wire cooling rack to cool completely. This step is crucial for preventing a soggy bottom crust and ensuring even cooling.

You have the option to enjoy these delightful treats warm straight out of the oven for a comforting experience, or you can refrigerate them for a few hours. Chilling allows the filling to firm up further, resulting in a more classic pumpkin pie texture. Both ways are absolutely delicious, so choose what suits your preference!

For optimal freshness, store your cooled mini pumpkin pies in an airtight container in the refrigerator for about 5-6 days. They also freeze exceptionally well, making them an excellent make-ahead option for busy holiday seasons. Simply arrange them in a single layer in a freezer-safe container or bag, and they’ll keep for up to 2-3 months. When you’re ready to serve, thaw them at room temperature for a few hours or overnight in the refrigerator.

The Essential Topping: Vegan Whipped Cream

No pumpkin pie, mini or otherwise, is truly complete without a generous dollop of whipped cream! For these vegan delights, a light and airy non-dairy whip is an absolute must. My personal favorite for its rich flavor and perfect texture is homemade coconut whipped cream. It’s surprisingly easy to make and adds a luxurious touch. Alternatively, I also offer a recipe for aquafaba-based vegan whipped cream, which is another fantastic option for a lighter finish. If you’re looking to keep things super simple, there are many excellent store-bought non-dairy whipped creams available, typically made from almond, coconut, or oat milk. Choose your favorite and don’t forget that final flourish!

Helpful Tips and Creative Substitutions for Your Mini Pies

These mini pumpkin pies are incredibly versatile, allowing for various adjustments to suit dietary needs or personal preferences. Here are some tips to help you customize your baking experience:

  • Gluten-Free Option: To make these mini pies suitable for a gluten-free diet, simply substitute the all-purpose flour in the crust with a gluten-free vegan pie crust. Ensure your chosen blend is suitable for baking and handling.
  • All Vegan Butter Crust: My standard pie crust recipe typically calls for a combination of vegan butter and vegetable shortening for ultimate flakiness. However, if you prefer, you can easily use all vegan butter (1 cup total) for the crust. This will still yield a delicious and buttery texture.
  • Coconut Cream Insights: The filling relies on coconut cream for its rich, thick texture. You’ll usually find canned coconut cream alongside canned coconut milks. If it’s unavailable, simply purchase a few cans of full-fat coconut milk, refrigerate them overnight, and then carefully spoon out ONLY the thick, solid white cream from the top. Discard the watery liquid at the bottom. I haven’t tested a completely coconut-free option, but silken tofu, blended until smooth, might offer a similar creaminess, though it would alter the flavor profile.
  • DIY Pumpkin Pie Spice Mix: While a pre-mixed pumpkin pie spice makes things incredibly easy, you can create your own blend. For 1 tablespoon of pumpkin pie spice, use: 1 teaspoon ground cinnamon, 1 teaspoon ground ginger, 1/2 teaspoon ground nutmeg, and 1/8 teaspoon ground cloves. Adjust to your taste preferences for a more personalized flavor.
  • Regular Muffin Tin for Larger Minis: If you desire slightly larger mini pies, a regular-sized muffin pan is a great alternative. For this, use a larger 3.5-inch cookie cutter for the crusts and increase the baking time slightly to around 30 minutes, or until the crust is golden and the filling is set.
  • Sweetener Adjustments: Feel free to adjust the amount of brown sugar in the filling to your sweetness preference. You can also experiment with other sweeteners like maple syrup, though this may affect the consistency slightly.
  • Extra Flavor Boost: A tiny splash of vanilla extract or a hint of orange zest in the filling can add another layer of complexity to the flavor profile.

Ingredients

Pie Crust

  • 3 cups all purpose flour
  • 2 teaspoons granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup vegan butter, cold and cut into cubes
  • 1/2 cup vegetable shortening (or more vegan butter)
  • 6-8 tablespoons ice water

Pumpkin Pie Filling

  • 15 ounce can pumpkin pureé
  • 1 cup coconut cream
  • 1 cup brown sugar, lightly packed
  • 1 tablespoon pumpkin pie spice mix
  • 1/2 teaspoon salt
  • 3 tablespoons cornstarch

For Serving

  • Coconut Whipped Cream or other non-dairy whip
  • Sprinkle of pumpkin pie spice mix, optional

Instructions

Prepare oven and pan

  1. Preheat the oven to 375 degrees F (190°C) and generously spray a mini muffin pan with non-stick spray. If you have two pans, prepare both; otherwise, you can bake in batches.

Prepare pie crust

  1. In a food processor, combine flour, sugar, and salt. Pulse a few times to mix.
  2. Add the cold, cubed vegan butter and vegetable shortening. Pulse until the mixture resembles coarse crumbs.
  3. While the food processor is running, slowly drizzle in 6-8 tablespoons of ice-cold water until the dough begins to clump together. It will still look somewhat messy.
  4. Transfer the dough onto a lightly floured surface and gently bring it together to form a ball. Roll the dough with a rolling pin to about 1/4 inch thickness.
  5. Using a 2.5-inch round cookie cutter (or a glass/measuring cup), cut out dough rounds.
  6. Carefully place each dough circle into the prepared mini muffin pan cavities, pressing the dough flat against the bottom. They don’t need to be perfect or reach the very top.
  7. Once the pan(s) are lined, place them in the freezer to chill while you prepare the filling. If baking in batches, refrigerate any remaining dough.

Make the filling and bake

  1. Add all pumpkin filling ingredients to a blender and blend until completely smooth. If you don’t have a blender, whisk or mix everything very thoroughly in a bowl.
  2. Remove the muffin tin from the freezer and spoon approximately 1 tablespoon of filling into each unbaked crust, filling them almost to the top.
  3. Bake for 22-24 minutes, or until the crust edges are lightly golden brown and the filling is set with a slight jiggle.
  4. Allow the pies to cool in the pan for about 5 minutes before gently using a sharp knife or small spatula to pop them out. Transfer them to a cooling rack to cool completely. If baking a second batch, repeat the process.
  5. Enjoy them warm immediately, or refrigerate for a few hours for a firmer filling.
  6. Serve with a dollop of vegan whipped cream and an optional sprinkle of pumpkin pie spice mix or cinnamon.
  7. Store leftovers in a covered container in the refrigerator for 5-6 days. These pies also freeze well; simply thaw at room temperature before serving.

Notes

  1. Instead of a food processor, you can use a bowl with a pastry cutter. Mix dry ingredients, cut in butter/shortening, then stir in the ice water.
  2. For convenience, you may use store-bought vegan pie crusts. You will typically need two crusts for this recipe.
  3. For an all-butter crust, use 1 cup of cold, cubed vegan butter and omit the vegetable shortening.
  4. For the best results, use the thick, solid white coconut cream from a can of full-fat coconut milk (chilled overnight) or a dedicated can of coconut cream. Avoid any watery liquid.
  5. If you don’t have pumpkin pie spice mix, substitute with 1 teaspoon ground cinnamon, 1 teaspoon ground ginger, 1/2 teaspoon ground nutmeg, and 1/8 teaspoon ground cloves.
  6. For larger mini pies, use a regular muffin pan with a 3.5-inch cookie cutter for the crusts, and bake for approximately 30 minutes.
