The Irresistible Appeal of Vegan Mushroom Stroganoff

Stroganoff, a name synonymous with rich, creamy indulgence, has a storied history rooted in Russian cuisine. Traditionally, it features succulent beef, a generous dollop of dairy-rich sour cream (smetana), and hearty egg noodles. It’s a dish renowned for its warming and luxurious qualities, making it the quintessential cold-weather meal. But who says you need animal products to achieve that ultimate level of comfort? This vegan rendition proves that plant-based ingredients can not only replicate but often elevate the experience, offering a healthier, equally delicious, and ethical alternative.

Our vegan mushroom stroganoff artfully reimagines this classic, substituting beef with the deep, earthy umami of various mushrooms and trading dairy for a dreamy, smooth cashew cream. The mushrooms are gently sautéed with aromatic vegetables, then simmered to perfection in a thick, savory “gravy” before being tossed with your favorite cooked pasta. Each forkful is a symphony of flavors and textures that will have you coming back for more. This isn’t just a meal; it’s an experience that’s destined to become a staple in your culinary repertoire.

How to Create Your Creamy Vegan Mushroom Stroganoff: A Step-by-Step Guide

Crafting this delightful vegan mushroom stroganoff is a straightforward process. Here’s a detailed breakdown to ensure your dish turns out perfectly. For precise measurements, always refer to the complete recipe card below.

1. Preparing Your Pasta Perfection

Begin by cooking your chosen pasta. In a large pot of generously salted boiling water, cook the pasta noodles according to the package directions until they are al dente. This typically takes about 8-12 minutes depending on the pasta shape. Once cooked, drain the pasta thoroughly and set it aside. For this recipe, short-cut pasta noodles like fusilli, penne, bowtie, or cavatappi work wonderfully, as their shapes are excellent for catching the creamy sauce. Alternatively, for a truly indulgent experience, consider serving your stroganoff over a bed of fluffy vegan mashed potatoes!

2. The Secret to Creaminess: Cashew Cream

The velvety smooth cashew cream is the heart of our vegan stroganoff. To prepare it, first, bring about 3 cups of water to a boil. Pour this hot water over your raw cashews and let them soak for a quick 5 minutes. This quick soak softens them beautifully. Drain the cashews and discard the hot water. Transfer the softened cashews to a high-speed blender, along with 3/4 cup of fresh water and a tablespoon of apple cider vinegar. Blend until the mixture is incredibly smooth and creamy, with no visible cashew pieces. Set this aside; it will be added at the end to create that luxurious texture.

3. Sautéing the Aromatics and Mushrooms

Warm 2-3 tablespoons of olive oil in a large pot or deep pan over medium-high heat. Once the oil is shimmering, add the chopped onions and thinly sliced mushrooms. Cook, stirring frequently, until the onions soften and become translucent, and the mushrooms release their moisture, shrink in size, and begin to develop a golden-brown hue. This browning is crucial for deep flavor. Season generously with a pinch of salt and freshly ground black pepper to enhance their natural flavors.

4. Building the Flavorful Gravy Base

Stir in the minced garlic and cook for just one more minute until fragrant. Be careful not to burn the garlic. Next, pour in the 1/2 cup of dry white wine to deglaze the pan. Use a wooden spoon to scrape up any delicious browned bits from the bottom of the pot – these add immense flavor to your sauce. Sprinkle the 3 tablespoons of all-purpose flour over the vegetables and stir it in thoroughly, cooking for about 1 minute to create a roux that will thicken the sauce. Gradually whisk in the 2 cups of vegetable broth, stirring constantly to prevent lumps. Add the 2 teaspoons of Dijon mustard, 2 tablespoons of nutritional yeast (for a cheesy, umami depth), 1 tablespoon of vegan Worcestershire sauce, and 3 small sprigs of fresh thyme (or 1/2 teaspoon dried). Bring the mixture to a boil, then reduce the heat to a simmer and let it cook for 4-5 minutes, allowing the sauce to thicken beautifully.

5. Achieving Ultimate Creaminess and Finishing Touches

Once the gravy has thickened, stir in the prepared cashew cream. This is where the magic happens, transforming the sauce into an incredibly rich and creamy mushroom gravy. Add the cooked pasta to the pot and toss it gently to ensure every strand is coated in the luxurious sauce. Cook for another 1-2 minutes, just long enough for the pasta to heat through and fully absorb the flavors. Taste the stroganoff and adjust the seasoning with additional salt and pepper as needed. Garnish with fresh parsley or more fresh thyme before serving. Enjoy your homemade, utterly delightful vegan mushroom stroganoff!

Frequently Asked Questions About Vegan Mushroom Stroganoff

What is mushroom stroganoff?

Stroganoff is a classic Russian dish, traditionally featuring sautéed pieces of beef served in a rich sauce with smetana (sour cream). In our vegan version, we replace the beef with hearty, umami-rich mushrooms and create a dairy-free cream sauce, typically from cashews, to achieve that same comforting, savory, and incredibly delicious experience. It’s a plant-based reimagining that captures all the comforting essence of the original.

What kind of mushrooms are best for mushroom stroganoff?

Cremini mushrooms are a fantastic choice for stroganoff due to their widely available nature and their mild, savory, and ‘meaty’ flavor. They hold up well in the sauce. However, feel free to experiment with other varieties like brown button mushrooms, delicate oyster mushrooms, earthy shiitake mushrooms, or thinly sliced portobello mushrooms. For an even richer and more complex flavor profile, consider using a blend of a few different types of mushrooms.

What can I use instead of white wine?

If you prefer to keep this recipe alcohol-free, you can easily substitute the white wine with an equal amount of vegetable broth. The broth will still contribute depth and help deglaze the pan effectively without adding any alcohol.

What can I replace the cashew cream with?

While cashew cream provides the ideal richness and texture, you have a few alternatives:

  • Store-bought vegan sour cream: A whole container of a good quality vegan sour cream (like Tofutti brand) can be used.
  • Full-fat coconut milk: A can of full-fat coconut milk will make the gravy wonderfully rich and creamy, though it may impart a subtle coconut flavor.
  • Other vegan creams: 1 1/2 cups of another unsweetened vegan cream alternative, such as Ripple half and half, can also work.
Can I make it gluten-free?

Absolutely! To make this stroganoff gluten-free, simply swap your regular pasta noodles for your favorite gluten-free pasta. For the thickening agent, replace the all-purpose flour with brown rice flour or a gluten-free flour mix. Additionally, you can serve the delicious sauce over other gluten-free bases like rice, mashed potatoes, mashed cauliflower, spaghetti squash, or zucchini noodles (“zoodles”).

How do you store leftover mushroom stroganoff?

While vegan stroganoff is best enjoyed fresh off the stove, leftovers are still delicious! Store them in an airtight container in the refrigerator for 2 to 3 days. The mushroom cream sauce can also be frozen separately from the pasta for up to 1 month. When reheating, whether on the stove or in the microwave, you might find the sauce has thickened; simply add a splash of water or plant-based milk to restore its creamy consistency.

Ingredients

  • 10 ounces pasta of choice
  • 2-3 tablespoons olive oil
  • 1 medium onion chopped
  • 1 pound (16 ounces) cremini mushrooms thinly sliced, or other mushrooms
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 3 tablespoons all purpose flour
  • 2 cups vegetable broth
  • 2 teaspoons dijon mustard
  • 2 tablespoons nutritional yeast
  • 1 tablespoon vegan Worcestershire sauce
  • 3 small sprigs fresh thyme chopped, or 1/2 tsp dried
  • 3/4-1 teaspoon salt or to taste

Cashew Cream

  • 1 cup raw cashews
  • 3/4 cup water
  • 1 tablespoon apple cider vinegar

Instructions

  1. Cook the pasta: In a large pot of boiling salted water, cook the pasta noodles according to package instructions. Drain well and set aside.
  2. Make the Cashew Cream: Bring 3 cups of water to a boil. Pour the hot water over the cashews and let soak for 5 minutes. Drain the cashews and discard the soaking water. Add them to a blender along with the 3/4 cup fresh water and apple cider vinegar. Blend until very smooth. Set aside.
  3. In a large pot or pan, warm the olive oil over medium-high heat. Add the onions and mushrooms. Stir frequently until the onions and mushrooms are tender and have shrunk in size. Season with a little salt + pepper.
  4. Stir in the garlic and cook for 1 more minute, then add the white wine and deglaze the pan by scraping any brown bits from the bottom of the pan. Sprinkle the flour on top and stir it into the vegetables. Gradually pour in the vegetable broth, stirring constantly. Now add the dijon, nutritional yeast, Worcestershire sauce, thyme and salt. Bring to a boil, then lower the heat and simmer for 4-5 minutes until it thickens slightly.
  5. Now add the cashew cream and stir it in. You should have a very creamy mushroom gravy at this point. Stir in the cooked pasta and cook until heated throughout, about 1-2 minutes. Taste, add additional salt and pepper, as desired. Garnish with fresh parsley or more thyme.

Notes

  1. Gluten-free: Use your favorite gluten-free pasta and instead of all-purpose flour, use brown rice flour or a gluten-free flour mix.
  2. May also serve mushroom stroganoff over rice, mashed potatoes, spaghetti squash or “zoodles”.
  3. If you want to skip slicing mushrooms, buy pre-sliced mushrooms! You can use a variety of mushrooms for a more interesting dish. Or substitute vegan beef for vegan beef stroganoff.
  4. Cashew cream substitutions: You could use store-bought vegan sour cream, such as Tofutti brand. Use the entire container for the recipe. Or you could substitute a can of full-fat coconut milk or use 1 1/2 cups of another vegan cream, like Ripple half and half.
  5. Store leftover mushroom stroganoff in the refrigerator for 2-3 days. You may freeze the sauce separate from the pasta, but it doesn’t freeze well once the pasta is added.
  6. Serving suggestions: I like to serve mushroom stroganoff with a side of salad, steamed kale, steamed or roasted broccoli or any other vegetable you like.
