Discover the Magic of Creamy One-Pot Vegan Pasta

Is there anything more satisfying than preparing a complete, flavorful meal using just one pot? The answer is a resounding no, especially when it comes to this exquisite creamy vegan pasta. Much like my highly acclaimed best vegan mac and cheese and the vibrant Tuscan vegan gnocchi, this recipe champions simplicity and efficiency. All the ingredients—from fresh vegetables to the pasta itself—simmer together in a single pot on your stovetop, creating a harmonious blend of flavors and a remarkably rich, creamy texture. This isn’t just a meal; it’s an experience, delivering luxurious bites, versatile vegetable options, and aromatic seasonings, all ready to delight your palate in just 30 minutes.

The heart of this easy vegan pasta dinner lies in its exquisitely creamy, Italian-inspired sauce. Crafted from robust diced tomatoes, intensely flavorful sun-dried tomatoes, and the star of the show: velvety vegan mascarpone cheese. This dairy-free mascarpone is the secret weapon, transforming a simple tomato sauce into a culinary masterpiece. Its rich, smooth consistency imparts an unparalleled lusciousness, elevating the entire dish to a thing of beauty. For those seeking alternatives, feel free to experiment with other creamy plant-based options such as vegan sour cream, vegan cream cheese, or even a homemade cashew cream to achieve that perfect velvety finish. And don’t let any leftover vegan mascarpone go to waste! It’s absolutely divine in my Vegan Tiramisu for a truly indulgent dessert.

Essential Ingredients & Smart Substitutions

Crafting this incredible one-pot vegan pasta starts with understanding each ingredient’s role and knowing how to make smart substitutions. Here’s a detailed look at what you’ll need and how to adapt it:

  • Olive Oil: The foundation for sautéing. Extra virgin olive oil adds a lovely flavor, but any good quality olive oil will work. You can also use avocado oil for a neutral taste.
  • Onion and Garlic: These aromatic powerhouses form the base of almost any great Italian sauce. A sweet onion will mellow nicely into the sauce, while fresh minced garlic provides a pungent depth. Don’t skimp on the garlic!
  • Diced Tomatoes: Canned diced tomatoes are your best friend here, keeping the process simple and efficient. Look for fire-roasted diced tomatoes for an extra layer of smoky flavor, or use crushed tomatoes if you prefer a smoother sauce. Ensure you include their juices, as this contributes to the liquid needed for cooking the pasta.
  • Vegetable Broth: This is crucial for cooking the pasta and building the sauce’s body. Choose a good quality, low-sodium vegetable broth to control the overall saltiness of your dish. Water can be used in a pinch, but broth adds significantly more flavor.
  • Italian Seasoning: A blend of dried herbs that captures the essence of Italian cuisine. If you don’t have a pre-packaged blend, create your own by combining dried oregano, parsley, rosemary, basil, and a touch of thyme. Fresh herbs can also be added at the end for brightness.
  • Sun-Dried Tomatoes: These concentrated bursts of tomato flavor add a delightful chewiness and umami depth. You’ll typically find them jarred in oil in most major grocery stores. While highly recommended for their unique contribution, feel free to omit them if they’re not to your taste or unavailable.
  • Tomato Paste: A small but mighty ingredient, tomato paste deepens the tomato flavor and adds richness. Sautéing it briefly before adding liquids helps to develop its sweetness and complexity.
  • Pasta: The key to a true one-pot experience is using short-cut pasta shapes that cook quickly and evenly. Penne, fusilli, rotini, or bow ties (farfalle) are excellent choices. Using regular or gluten-free pasta works equally well.
  • Spinach: Fresh baby spinach wilts beautifully into the hot pasta, adding a touch of green, nutrients, and a slight bitterness that balances the richness of the sauce. Feel free to substitute with other leafy greens like kale (remove tough stems and chop finely) or Swiss chard.
  • Vegan Mascarpone: This is the star for achieving that luxurious, creamy texture. My homemade dairy-free mascarpone recipe is ideal, offering unparalleled richness. If you don’t have mascarpone, unsweetened coconut cream (from a can, thick part), vegan cream cheese, or vegan sour cream are fantastic substitutes that will still deliver a wonderfully creamy mouthfeel.
  • Vegan Parmesan Cheese: Optional but highly recommended! A sprinkle of grated vegan parmesan adds a salty, umami “cheesy” flavor that truly completes the Italian experience. You can use store-bought or make your own.
  • Salt and Pepper: Essential for seasoning to taste. Always adjust at the end to ensure the flavors are perfectly balanced.

Creative Variations for Your One-Pot Masterpiece

One of the best aspects of this One Pot Vegan Pasta is its incredible versatility. It’s a fantastic base for customization, allowing you to tailor it to your dietary needs, pantry staples, or simply your cravings. Get creative with these delicious variations:

  • Gluten-Free: Making this recipe gluten-free is incredibly simple. Just swap out regular pasta for your favorite short-cut gluten-free pasta. Ensure it’s a type that holds its shape well during cooking and absorbs sauce effectively. The cooking time might vary slightly, so follow package instructions as a guide, stirring often.
  • Nut-Free: If you have nut allergies, you can still enjoy a creamy sauce! Replace the vegan mascarpone with full-fat canned coconut cream (use only the thick, solid part from the top of a chilled can). For the vegan parmesan, choose a nut-free variety or make my vegan parmesan cheese recipe using pepitas (pumpkin seeds) instead of nuts.
  • Boost the Veggies: This one-pot wonder is ideal for a “clean out the fridge” dinner! Almost any vegetable can be added. Consider sautéing diced bell peppers, sliced mushrooms, shredded carrots, zucchini, or even red onions alongside the sweet onion at the start. Cherry tomatoes can be added towards the end for a fresh burst of flavor. Don’t be afraid to experiment with broccoli florets, asparagus tips, or green beans for added color and nutrition.
  • Add Protein: To make each serving extra hearty and filling, integrate your favorite plant-based proteins. Cooked red lentils can be added with the broth for a subtle protein boost. Diced vegan chicken, vegan ground beef crumbles, crumbled tempeh, or rehydrated soy curls can be stirred in during the last few minutes of cooking to heat through and absorb the delicious sauce.
  • Spice it Up: For a kick, add a pinch of red pepper flakes with the garlic, or a dash of your favorite hot sauce at the end.
  • Herby Freshness: While Italian seasoning provides a great base, finishing with fresh chopped basil or parsley adds a vibrant aroma and fresh taste that elevates the dish.

Ingredients

  • 1 tablespoon olive oil
  • 1 small sweet onion, chopped
  • 4 cloves garlic, minced
  • 15 ounce can diced tomatoes, with their juices
  • 3 cups vegetable broth
  • 1 tablespoon Italian seasoning
  • 1/3 cup sun dried tomatoes, chopped small
  • 1 tablespoon tomato paste
  • 12 ounces small pasta (e.g., fusilli)
  • 2-3 cups baby spinach
  • 1/2 cup Vegan Mascarpone (OR coconut cream, vegan cream cheese/sour cream)
  • 1/2 cup vegan parmesan cheese, shredded
  • salt + pepper, to taste

Instructions

  1. Heat the olive oil over medium heat and sauté the onions until translucent, 3-4 minutes.
  2. Add the garlic and sauté for another minute, until fragrant.
  3. Add the diced tomatoes with the juices, vegetable broth, Italian seasoning, sun dried tomatoes and tomato paste. Stir well so the tomato paste dissolves into the broth.
  4. Now add the pasta, bring to a boil, then reduce heat to a simmer and cook, stirring often, until the pasta is done, about 10-12 minutes. If needed, add a little extra liquid (broth or water) so the pasta doesn’t dry out.
  5. Stir in the baby spinach and let it wilt.
  6. Lastly, stir in the vegan mascarpone and parmesan. The sauce should be creamy and thick at this point. Let it sit, covered, for about 5 minutes before serving so the sauce can thicken a bit more. Enjoy!

Notes

  1. You may leave out the sun dried tomatoes if desired. The recipe is flexible, so feel free to add more veggies such as chopped zucchini, kale, or bell peppers.
  2. For a gluten-free version, simply use your preferred gluten-free pasta.
  3. If vegan mascarpone is unavailable, you can use vegan sour cream, vegan cream cheese, or cashew cream to make the sauce creamy. The dish is also delicious without these additions.
  4. Vegan parmesan cheese is optional and can be omitted if preferred or for dietary reasons.
